The 2018 Brewers Dinner series will tell a story throughout the year and will each feature a six course gourmet meal paired with Pelican Beers. This dinner will be a venture into future food trends, looking into what will be central to our diets as we navigate questions of sustainability. How will culinary science and technology shape what is on our plates.

Gochujang Dungeness crab, smoked scallop, preserved lemon gelee with soy cured egg yolk

Salmon tartar on ciabatta crisps with clam and bacon cream

Shakshuka savory ciabatta French toast on ciabatta bread, house-made whipped ricotta, harissa sauce, vegetable chutney with arugula and micro greens
Paired with A Bockwork Orange Weizenbock
Chantrelle, Portobello, crimini and shitake panna cotta with savory soy meringue “mushroom” topped with micro greens and edible “soil”

Hawaiian Paniolo style wild venison tenderloin, potato puree with demi-glace, carrot and carrot green emulsions, finished with crushed almonds and orange zest
